Halibut Steaks Make Festive Holiday Dish

Here’s an easy recipe for halibut steaks on a bed of tender, crisp-cooked vegetables that is made with the use of the microwave oven.
It’s ideal for calorie-counters who want to eat lighter foods during the holiday season.
This festive holiday dish is perfect for a family dinner or a yule dinner party.
HALIBUT WITH VEGETABLES
1 lime or lemon
1 medium carrot, diced
1 stalk celery, diced
4 green onions, chopped
2 tablespoons dry white wine or water
1/4 teaspoon crumbled oregano
Salt, pepper
1 medium tomato, peeled and diced
4 halibut steaks, about 6 ounces each
2 tablespoons chopped parsley
Thinly slice half of lime. Cut remaining half in wedges and set aside. Combine lime slices with carrot, celery, green onions, wine and oregano on microwave-safe platter. Season to taste with salt and pepper.
Microwave on HIGH 5 minutes or until vegetables are tender but still crisp. Add tomato. Season halibut to taste with salt and pepper and arrange over vegetables. Sprinkle with parsley.
Cover with plastic wrap and microwave on HIGH 4 to 6 minutes or until fish flakes easily when tested with fork, turning platter once during cooking. Garnish with lime wedges cut from remaining half of lime. Makes 4 servings.
