For a refreshing eye-opener during the sizzling summer months try these iced breakfast drinks made with low fat goat’s milk.
At only 2.5 grams of fat per cup the new low-fat goat’s milk has a rich creamy consistency and a nutty flavor making it a good-tasting nutritious base for fruit of coffee drinks. ORANGE ICED COFFEE
ORANGE SUGAR
1/2 cup sugar
Peel 1/4 orange
2-inch piece vanilla bean, split
Combine sugar and orange peel in glass jar. Scrape seeds from vanilla bean into sugar. Add vanilla bean, stir and cover until ready to use.
COFFEE
1/2 cup freshly brewed coffee
1/2 cup low-fat goat’s milk
Ice cubes
In small bowl combine hot coffee and 2 tablespoons Orange Sugar, stirring until sugar is dissolved. Stir in goat’s milk. Pour over ice in glass or mug. Top with sliver of sugared orange peel.
Makes 1 serving.
Each serving contains about:

MIXED FRUIT BREAKFAST DRINK
LEMON SUGAR
1/2 cup sugar
Peel 1/4 lemon
2-inch piece vanilla bean
Combine sugar and lemon peel in glass jar. Cut vanilla bean in half. Scrape seeds from vanilla bean into sugar. Add vanilla bean. Stir and cover until ready to use. Makes about 1/2 cup.
BREAKFAST DRINK
2 peaches
1 cup low-fat goat’s milk
2 apricots, pitted
1/4 cup lemon sugar
4 strips sugared lemon peel
2 egg whites
8 ice cubes
Raspberries
Mint sprigs
Remove skin from peaches and pit. Blend together peaches, goat’s milk, apricots, 1/4 cup lemon sugar, lemon peel and egg whites until smooth and frothy. Add ice cubes and blend to crush ice.
Serve over additional ice cubes. Top with few fresh raspberries and sprig of fresh mint.
Makes 4 servings.
