El Doctor del Valle: The food truck ambassador for Sinaloan seafood

The truck’s cevicheladas arrive in a plastic cup that brims with ceviche given a bath of beer-less michelada.

Oscar Soto’s invention, La Mochila, is shrimp ceviche and fish aguachile with abalone, octopus and oysters in a shallow, acidic pool, pinned under avocado slices, red onion ribbons and a dusting of ground, copper-toned chile piquin. A specialty of El Doctor Del Valle food truck.
