Hotel Health Food: It may be a little too New Age for some guests, but the Ritz-Carlton hotel in Dana Point has added macrobiotic cooking to its restaurant menus.
A far cry from the steaks and prime rib, the macrobiotic recipes were developed for the Ritz-Carlton chain by seven of its chefs over three days, working in conjunction with a nutrition center in Massachusetts.
The new dishes include sesame whitefish with ziti pasta and garlic chips, and vegetarian primavera with roasted red peppers coulis.
Macrobiotic cuisine is aimed at travelers who “want to maintain healthy eating habits and lifestyles even with a hectic schedule on the road,” said Henri Boubee, corporate director of food and beverage of the Atlanta-based chain.
